What you need to know before you start baking bread

Making homemade bread is a great way to bring the family together and have fun in the kitchen. And what better way to do that than with this easy olive oil bread recipe? With just a few simple ingredients and no kneading, you can have a delicious, golden brown loaf of freshly baked bread in no time.

Ingredients for Rosemary Bread with Parmesan

[Makes 10-12 servings; Prep time 20 minutes plus 8-24 hours rising time, bake time 45 minutes.]

  • 1½ cups water, room temperature
  • 1 teaspoon active dry yeast
  • 3½ cups bread flour, plus more for dusting
  • ½ teaspoon sea salt
  • 100 grams Parmesan cheese, diced
  • 2 tablespoons rosemary, finely chopped

Make the bread dough and shape the loaf

  1. Add the yeast to the water and let stand for 10-15 minutes, until the yeast begins to foam. While the yeast is activating, in a large bowl, stir together the flour, salt and rosemary until evenly distributed.

  2. Make a well in the center of the dry ingredients, then add water and yeast to the bowl and stir together until well combined. The dough should be a little sticky and soft, and you should still see a little flour around the edge of the bowl.

  3. Cover the dough with a tea towel and let it rise in a warm place until it has doubled in size.

  4. When you're ready to bake your bread, preheat the oven to 450°F and place a Dutch oven or covered baking dish in the oven. While the oven is preheating, transfer the dough to a floured surface. Add more flour as needed and gently fold the dough in on itself several times until it holds together. Then, using your hands, carefully shape the dough into a rectangular shape and press the Parmesan cubes into the dough. Roll the dough up into a log and fold the ends down. At this point, the dough will be thick and puffy and a little sticky. Sprinkle a little more flour on top and continue to gently shape the dough until a flour-covered ball forms. Transfer the dough to parchment paper and let it rest until the oven is preheated (about 20 minutes).

  5. Remove the baking dish from the oven and transfer the dough, still on the parchment paper, into the dish. Cover and bake for 30 minutes, then remove the lid and bake for another 10-15 minutes. The bread is done when the top is browned.

  6. Remove from the oven and lift the bread out of the baking tin using the baking paper and place it on a cooling rack to cool for up to an hour before slicing.
