During our short trip to Naples we came across the simple but very delicious dish "Gnocchi alla Sorrentina". A dish that only really develops its flavor with olive oil.
We have taken the original Italian recipe with olive oil for you ;-)
Ingredients for Gnocchi alla Sorrentina
500 g gnocchi / If you want to make these yourself, you can find good instructions on YouTube.
300 g mozzarella / You should really pay attention to quality here!
100 g parmesan cheese
500 g strained tomatoes / If you want a distinctive taste, it is best to make the tomato sauce yourself. We promise you it's very easy and quick :-)
1 red onion
some white wine
salt and pepper
fresh basil
olive oil / We recommend the delicious olive oil Leccino from the Al Torcio family.
Preparation of the Gnocchi alla Sorrentina
Fry the onion in olive oil and deglaze with white wine.
Let the white wine boil down and add the strained tomatoes.
Pick some basil and add it. Now you can add some salt and let the whole thing simmer for 10 minutes.
Now bring the pasta water for the gnocchi to the boil and add some salt. Now you can preheat the oven to 170 degrees and put the gnocchi in the boiling water.
Cut the mozzarella into small pieces and put it in the sauce. Let it rest for a short while.
Now take a casserole dish. The gnocchi are placed in this and then the finished sauce is poured over them.
Now you can grate the Parmesan cheese over it and then put it in the oven for 20 minutes.
When serving, add fresh pepper and a little of the delicious olive oil on top. - We now say "Dobar tek" in Croatian and enjoy ;-)
