The olive groves high above the Mirna Valley are among the best in the world. If you drive up the narrow road through the forest, you will come to a clearing lined with olive trees. This is exactly where the IPSA family estate is located, with a great view over the valley. In keeping with old family tradition, around 1,000 olive trees are cultivated around the village of the same name, mostly on difficult slopes. It goes without saying that the Ipša family has successfully risen to become one of the best olive oil producers in the world. Following this fame, the family offers a selection of five varieties, including the local Istarska Bjelica and the Frantoio and Leccino varieties imported from Italy. The oil exudes a smell of fresh herbs such as mint and basil. The mixture creates an oil of medium intensity and spiciness with a slight bitterness.
